Chocolate Almond Butter Cookies

Yield: 11 sandwich cookies
Ingredients:
Cookies
- 1 egg
- ¾ cup almond butter
- 1 tbsp organic coconut oil
- ½ cup organic coconut palm sugar
- 1 tsp pure vanilla extract
- 1 cup blanched almond flour
- 2 Tbsp organic coconut flour
- ¼ tsp baking soda
- pinch of sea salt
Filling
- ½ cup chocolate chips (or preferred dairy free brand)
- ¼ cup smooth natural almond butter
- ¼ tsp pure vanilla extract
Directions:
- Preheat oven to 350° F.
- Line 2 baking sheets with parchment paper.
- In a large bowl, whisk the egg with the ¾ cup almond butter, coconut sugar, vanilla, and coconut oil.
- In a smaller bowl, combine the almond and coconut flour, baking soda and pinch of salt.
- Add dry mixture to the wet and mix.
- Roll dough by 1 tbsp each into balls and flatten completely to ¼" thickness, then place on the parchment lined baking sheet.
- Bake for 8-10 minutes.
Filing
- Melt chocolate chips and almond butter,
- Stir in vanilla.
- Cool.
- Assemble the sandwich cookies. Spoon 1-2 tsp of filling on bottom of a cookie and place another cookie as lid.
